Jeff and Christa Duggan, the husband and wife team behind Portola Coffee Lab at OC Mart Mix in Costa Mesa, recently opened the new cafe that is a dedicated slow bar where connoisseurs can explore the wonders of coffees. The six-seat bar is located next to Portola Coffee Lab in Costa Mesa, and is open from 1:00 to 7:00 p.m. Tuesday through Friday and from 10:00 a.m. to 4:00 p.m. on the weekend. You’ll need a reservation in order to participate in the experience, which are available online at http://www.portolacoffeelab.com/theorem.
At the Theorem bar, you’ll be treated to a 30- to 45-minute private tasting of up to six traditional and innovative coffee creations. From barrel-aged Kyoto old-fashioned to signature iced coffee with fermented coffee from Bali, this is not your average coffee experience. The bar stocks fancy simple syrups, house-made coffee bitters, and garnishes you would normally find at a cocktail bar.
